5 Minute Pineapple Coleslaw

apple, celery, pineapple and golden raisins give this coleslaw recipe it's sweet flavor.

1 red delicious apple, chopped

1 celery stalk, chopped 

8oz. can – pineapple tidbits

1/4 cup – golden raisins

3 Tablespoons – light mayonaise

3 c – shredded cabbage

This quick and easy coleslaw recipe tastes great and has 9 grams of carbs, 2 grams of protein and 1 gram of fiber per 1/2 cup serving. 

Look for pre-shredded, bagged cabbage for coleslaw to save time, or double the recipe for a great potluck offering.

Drain pineapple tidbits, reserve liquid.  Combine pineapple, cabbage, rasins, apple and celery in a large bowl.  Mix reserved liquid with mayonaise and add to mixture.  Mix well, cover and refrigerate.
